MEZCAL DONAJI
Oaxaca was dominated by a group of noble natives belonging to the Zapotec and Mixtec cultures. King Cosijoeza, ruler of the city of Zaachila, had a daughter to whom he gave the name of “Donají” meaning “grand soul”.
Donají Joven Olla de Barro is made with agave Espadin. It is traditionally produced using a horno, wooden-mallet milling, and open-air fermentation. This mezcal is double-distilled in clay pots in Sola de Vega. Sola de Vega is located deep in the mountains of Oaxaca. Its altitude varies from 700 to 3000 meters above sea level. Its climate is generally cold. This mezcal has aromas of fresh herbs, sweet fruit, and wet earth. The taste is decidedly earthly with sweet notes of pollen and honey.
